Sprouted Buckwheat Cereal
Ingredients

80g buckwheat

1tsp cacao nibs
-
1tsp sunflower seeds
-
1tsp flaxseeds
-
1tsp goji berries
-
1tbsp desiccated coconut
-
200mg almond, coconut or oat milk

handful of blueberries
-
1 small banana

Instructions
​
Preparation of the Buckwheat

Soak the buckwheat for 4 hours
-
Drain and rinse the buckwheat to remove excess water

Spread the buckwheat in a thin layer on a tray or plate and set aside for 24 hours to allow the germination process to start

Rinse and drain the buckwheat twice during the 24-hour germination period

As the buckwheat germinates, they will start sprouting
-
After the 24-hour period, rinse once more and dry them either in a dehydrator (up to 8 hours) or in the oven on very low heat (up to 4 hours) until they a dry and crunchy

Store in an airtight glass jar (they will keep for a month)

Preparation of the Cereal

Slice the banana
-
Place all the dry ingredients together in a bowl

Mix well
-
Serve with the plant-based milk
